What's for dinner?

It's been awhile.
The job hunt is still on.
And I'm still not quite sure what I'm going to do with my life.
Not a whole lot has changed since I wrote last!

I'm working on my pro-bono clients. Just some graphic design and public relations work to keep the days passing by.

And the highlight of my day is to have dinner ready for my husband when he walks in the door. After working long hours at my previous position, dinner could not always be my priority. It has been really nice to be able to have a nice dinner for The Man when he gets home.

Although The Man could eat the same thing every day for a week, I need variety.

I have also been working on purging my freezer and pantry and I'm getting pretty creative.

We had a bag of frozen shrimp, purchased on sale awhile back (I'm a seafood junkie! Frozen suffices when I can get the fresh stuff...). I normally would make a classic shrimp and grits dinner but I thought I could do better. So onto the internet, my favorite cookbook, to find a good shrimp recipe. I like using http://www.allrecipes.com/ and http://www.foodnetwork.com/.

And, like most nights, I hit the jackpot recipe at allrecipes.com!

Coconut shrimp. I pan fried them , but next time I might try baking them to make them slightly healthier. I should have taken pictures, so the fake below will have to do!

I love allrecipes.com because the reviews are great! I generally read a handful of the reviews before I make changes to whatever I'm cooking. It's a valuable resource!

Now for tonight's dinner...any ideas?!

















Ohh...yummy coconut shrimp...I picked this photo because I, too, had one or two darker ones (i.e. burned!). Oops!
